Nicky Gray is the founder and director of Food Freedom. She is a mother of two children who both suffer from multiple food intolerance and allergies. Food Freedom was developed from the love and dedication Nicky has for her children.
For many years Nicky has lived with the struggles of bringing up two children with allergies and intolerance. She is continually researching and looking for new ways of improving life for everyone who suffers with these conditions.
Once the vision of Food Freedom began to develop, Nicky entered a ‘Dragon’s Den’ style competition through the University of Nottingham and won first place. This provided Food Freedom with funding to get started!
Nicky used part of the funding to develop her skills and gained qualifications in:
- Catering for Coeliac Disease
- Awareness of Coeliac Disease
- Food Allergies and Intolerance
- Food Safety
She has increased her own knowledge and professional development by attending educational sessions with dietitians on allergies and intolerance and is qualified with an Award in Education and Training.
Nicky has so much passion and proves her dedication by her Ambassadorship for Allergy UK. She is constantly fund raising and encouraged the Food Freedom team to enter their first half marathon in September 2014. They were delighted to raise just over £1197 for the Allergy Nurse Appeal in particular.
